Fruit Filled Coffee Cake

COOKS CORNER
3 eggs
1 1/2 cups plus 3 tablespoons sugar, divided
3/4 cup vegetable oil
1/4 cup orange juice
1 teaspoon vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
1 (21-ounce) can cherry or your favorite pie filling
1 teaspoon ground cinnamon

Directions
-Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
-In a large bowl, cream together eggs, 1-1/2 cups sugar, the oil, juice, and vanilla. Add flour and baking powder; mix well. Pour half the batter into prepared baking dish. Spread pie filling over batter.
-In a small bowl, mix remaining sugar and the cinnamon; sprinkle 1 teaspoon of the mixture over pie filling.
-Spoon remaining batter over pie filling then sprinkle with remaining sugar and cinnamon mixture.
-Bake 15 minutes then reduce heat to 300 degrees and bake 60 more minutes, or until toothpick inserted in center comes out clean.
