Hot Banana Peppers Stuffed with Hotdogs
Ingredients
1 quart tomato juice – canned if you have it
2 cups Apple Cider Vinegar or White
3 cups sugar
1 (64 ounce) bottle ketchup
4 cloves garlic
4 lbs hot dogs
1 gallon whole hot yellow banana peppers
Directions:
combine the first 5 ingredients and cook for 45 minutes
remove the stems and seeds from the peppers – use rubber gloves to prevent burning your fingers
stuff a hotdog into each pepper
pack peppers into pint jars
bring the sauce up to boil and pour into jars over peppers
put on your lids and rings
turn the jars upside down for 5 min and then set right-side up
My memory of these peppers always brings images of a nice summer day watching you laugh and joke around as you cut and stuffed the peppers and poured on the hot liquid in the kitchen. I am sure that is why Jeff loves them so much.
